Healthy cookies...



I have found a few recipes that I want to give a go...  My criteria are that a) it tastes good,  b)it is relatively simple, with ingredients that I am likely to have on hand, or have easy access to, and c) that over 95% of the cookie ingredients are good.  Not processed, not white, not too fatty.  I want a cookie that this pregnant mama can feed her babies, over indulge in,  and put it in the midwife requested food journal with out having to lie, or feel guilty.  Too much to ask?  Maybe.  I might have to rethink the over indulgence part.  I can take that a bit too far if I let myself get out of hand....  Here are my top recipes (side note, the word recipe is really hard for me to spell, and so I am painfully aware of how many times I have used it in the run on paragraph) so far....


The White Bean Cookie...

yup, it has a can of white beans tucked inside.  It doesn't sound appealing,  yet I feel compelled to try it.  The obstacle here is that my food processor needs a new bowl.  Maybe my blender would be ok?


Nikki's Healthy Cookie...

Maybe its the pretty picture, but this cookie looks so good.  True it doesn't have any flour, eggs, or butter...  I just have a feeling that this could be the one.


Honey Cupcakes...

Not a cookie, but I am not hung up on that little detail.  They sound like they could be delightful.  They served them at a birthday party with fresh whipped cream, but maybe I could substitute peanut butter and honey, or make that yogurt spread... (I don't know how to describe the yogurt spread, but I like it!)


After a day of searching and this is all I come up with.  Anyone have any ideas?  Places to look?  I am open to suggestions...

I think I will have to give those white bean ones a try. I've had fudge made with beans and it was pretty good.
